Salted Nut Roll Peanut Bars


Ingredients:


1/2 cup margarine or butter, softened
2/3 cup brown sugar, packed
2 egg yolks

2 teaspoons vanilla
1 cup flour
1/2 cup crushed pretzels
1/2 teaspoon baking powder
1/4 teaspoon baking soda
7 ounce jar marshmallow creme
1/2 cup peanut butter
1/4 cup powdered sugar
1 1/4 cups salted cocktail peanuts
14 ounces Kraft caramels (about 50)
3 tablespoons milk

Directions:

Preheat oven to 350 degrees.
  • Lightly spray a 13 x 9 inch pan, then set aside. 
  • In a large bowl, beat margarine with electric mixer on medium to high speed for 30 seconds. 
  • Add brown sugar, egg yolks and vanilla. Beat until combined, scraping bowl occasionally. 
  • In a small bowl combine flour, pretzels, baking powder and baking soda. 
  • Add this to the butter and brown sugar bowl. Blend in with the mixer. Use a spoon to stir in any remaining flour mixture that the beaters didn't get. 
  • Press into bottom of the prepared pan.
  • Bake for 13-14 minutes or until lightly browned. 
  • In a medium microwave safe bowl, combine marshmallow creme and peanut butter. 
  • Microwave on HIGH for about 30 seconds or until softened and slightly melted. Stirring to combine well. 
  • Then stir in powdered sugar. Spread mixture over the crust. 
  • Drop by little spoonfuls all over to soften with the heat of the bottom crust, then spread very gently. 
  • Sprinkle with salted peanuts.
  • In a heavy large saucepan, combine unwrapped caramels and milk. Cook and stir over low/medium heat until melted and smooth, stirring often. 
  • Pour caramel mixture evenly over peanut layer. 
  • Cool in pan. They cut better if refrigerated and set up well. Cut into bars.

Makes: 48 bars
