Jalapeno & Corn Cornbread Muffins
Ingredients:
1 ¼ cup flour
¾ cup cornmeal
¼ cup sugar
2 tsp baking powder
1 Tbsp salt
1 cup skim milk
¼ cup beer (any kind)
1 egg (beaten or 2 egg whites)
1 can whole kernel corn (15 ¼ oz)
1 Tbsp minced garlic
1 jalapeno chopped (seeds removed)
¼ cup canola oil
Directions:
Preheat oven to 400 F
- Grease pan or muffin tin
- In a large bowl combine dry ingredients
- Stir into dry mixture all wet ingredients - including the corn and jalapenos and stir well until blended NOT pureed remember it will not be completely smooth as you will have the whole corn kernels and jalapenos in your batter.
- Pour batter into prepared baking dish
- Bake 20-25 minutes or until golden brown and an inserted toothpick would come out clean.
- Serve warm!
