Bacon & Egg Tacos w/Bacon Taco Shells



Bacon & Egg Tacos

Ingredients:

1 lb. Bacon
6 Eggs
3 Green Onions (chopped finely)
Salt & Pepper (to taste)
1/4 cup Milk 
1/2 Green Pepper (chopped)
1/2 Red Pepper (chopped) 
Butter (for cooking eggs)

Directions:

  • Take bacon and weave into a cross work pattern as shown in picture above.
  • Put on cookie sheet and cook in oven until cooked through, but not hard.
  • Take out of oven and get large cookie cutter and cut into circles (large enough for taco shell)
  • Shape around rolling pin or something round (for shape of taco) leaving straight on edges, do this while still warm
  • Leave to cool and hold shape
  • In frying pan, melt butter
  • In a bowl add eggs, with whisk mix eggs, salt & pepper, milk
  • In frying pan, add to melted butter, contents of bowl, finely chopped green onions, and half of the chopped red & green peppers.
  • With wooden spoon swirl eggs while cooking, to make then scrambled.
  • Assemble bacon taco shells with scrambled eggs and use remaining red & green peppers to decorate.
