Mashhed Potato Balls w/Bacon Bits



Loaded Mashed Potato Balls w/Bacon

Ingredients:

2 cups Cold Mashed Potatoes
1 egg (lightly beaten)
4 oz block of Cheddar Cheese (cubed)
1/8 cup sour cream
1/2 cup green onions (chopped)
1/2 lb bacon (cooked & crumbled)

Directions:

Preheat oven to 350 F
  • Mixed mashed potatoes, sour cream, green onions & 1/4 cup of bacon.
  • Shape mashed potato mixture into 1 inch balls.
  • Put a piece of cheese into potato ball, make sure the cheese is completely covered.
  • Dip balls into egg, and then dredge them in remainder of bacon bits.
  • Place on cookie sheet or baking dish.
  • Bake for 15 - 20 minutes or until cheese is oozing out.
  • Mmmm soo goood!
