Loaded Mashed Potato Balls w/Bacon
Ingredients:2 cups Cold Mashed Potatoes
1 egg (lightly beaten)
4 oz block of Cheddar Cheese (cubed)
1/8 cup sour cream
1/2 cup green onions (chopped)
1/2 lb bacon (cooked & crumbled)
Directions:
Preheat oven to 350 F
- Mixed mashed potatoes, sour cream, green onions & 1/4 cup of bacon.
- Shape mashed potato mixture into 1 inch balls.
- Put a piece of cheese into potato ball, make sure the cheese is completely covered.
- Dip balls into egg, and then dredge them in remainder of bacon bits.
- Place on cookie sheet or baking dish.
- Bake for 15 - 20 minutes or until cheese is oozing out.
- Mmmm soo goood!
