Homemade Starburst Candy


4 tablespoons butter 
1/2 cup light corn syrup 
3/4 cup granulated sugar 
1 teaspoon lemon,strawberry,lime, watermelon,orange extract 
1/2 teaspoon citric acid 
2 drops yellow food coloring

Combine butter, corn syrup and sugar in a medium saucepan on medium-high heat. Stir until the butter and sugar dissolve, then use a wet pastry brush to wash down the sides of the pan to prevent sugar crystal formation. Place a candy thermometer in the syrup mixture.

Stir candy occasionally while it's cooking, until the thermometer reaches 245 F (118 C). Be careful not to overcook even slightly as doing so makes the candy hard rather than chewy.

Immediately upon reaching the proper temperature, remove the pan from heat and stir in Fruit Flavor extract, citric acid and yellow food coloring. 

Stir until the ingredients are well blended, then pour the candy into the loaf pan.

Leave the candy to set for at least 4 hours or overnight, until it has cooled completely.

When set, remove the candy from the pan by holding onto the foil as and flipping the candy upside down on a cutting board. Peel the foil off the back, and use an oiled knife to cut the candy into small, 1-inch squares. Serve and enjoy.
