Lasagna



Lasagna


Ingredients:



2 Tbsp. butter
½ cup onion, chopped
2 cloves garlic, chopped
1 lb Italian sausage
1 lb ground beef
16 oz. tomato sauce
16 oz. tomato paste
16 oz. tomatoes, whole
1 cup water
1 Tbsp each parsley, basil, oregano,
1 tsp each salt, pepper
¼ tsp baking soda or ¼ cup flour
¼ tsp sugar
2 lbs Ricotta cheese
2 eggs
1 Tbsp basil
2 Tbsp. Parmesan cheese
1 lb sliced mozzarella cheese
1 box Lasagna noodles, 12 long noodles

 

Directions:


 
Partially cook lasagna noodles with a tsp salt and a splash of olive oil, drain and set aside.

In large skillet or sauce pan, sauté onion and garlic in butter. Remove skins from sausage and brown sausage and ground beef with onions and garlic. Chop tomatoes; simmer with meat mixture, tomato sauce, paste, water, herbs and spices, flour, and sugar for 30 to 40 minutes or so, stirring often, until it thickens.

In bowl combine ricotta cheese, eggs, Parmesan cheese and basil.

Preheat oven to 350 degrees F. 


Place ½ the meat sauce in the bottom of a baking pan; top with half the cooked noodles; top with 1/2 of ricotta mixture over noodles, then layer sliced Mozzarella cheese. Repeat one more time.

Cover with foil and bake for 25 minutes…remove foil and continue to bake for additional 25 minutes. Remove from oven sprinkle with parsley if desired, let sit 15 minutes, then serve.
