Cucumber Tomato Bites with Creamy Parmesan Herb Spread
Ingredients:
2 long cucumbers
16 cherry tomatoes
2 (8 oz) blocks cream cheese
¼ cup sour cream
3 Tablespoons fresh parsley, minced
1 Tablespoon fresh garlic, minced
1 teaspoon onion powder
1 teaspoon paprika
2 teaspoons dill weed
½ teaspoon quality sea salt
½ cup Parmesan cheese, grated
Instructions:
Combine cream cheese, sour cream, herbs and salt in a medium mixing bowl, stirring until the mixture is smooth and creamy.
Stir in the Parmesan cheese and set the mixture in the fridge to let the flavors meld, while you prep the veggies.
Peel and slice the cucumbers. The slices should be ⅜ to ½ inch thick, so they will be sturdy and easy to handle as finger food. Slice the cherry tomatoes in half, lengthwise.
You can simply spread the cheese spread onto the cucumber slices and they will be just as delicious, but if you want to make them a little more decorative for holiday entertaining. To do that, simply pack the cheese spread into a piping bag. Be sure the tip you select has a wide enough opening to keep from being plugged by the grated Parmesan. Then pipe Creamy Parmesan Herb Spread into rosettes on top of each cucumber slice.
Center one cherry tomato half on top of each appetizer. Cover and refrigerate until ready to serve. Enjoy!
