Cinnamon Streusel Banana Bread/Muffins
Had a big day of baking today, 7 loaves & 12 muffins, the house smells amazing. If you look close at the photo of the muffins you even see one of my Yorkies, if there is food they are close to get anything that drops!
Ingredients:
3 over ripe bananas, smashed up
1/3 cup melted butter
¾ cup sugar
1 egg, beaten
1 tsp vanilla
¼ tsp nutmeg
1 tsp baking soda
Dash of salt
1 ½ cup of flour
For the Swirl:
1/3 cup sugar
1 tbsp. cinnamon
Streusel Topping:
3 tbsp. flour
¼ cup brown sugar
¼ tsp cinnamon
2 tbsp. butter, softened
¼ cup walnuts, chopped
Directions:
Preheat oven to 350 F.
Butter & flour a 9 x 5 loaf pan or if making muffins line 12 muffin tin with papers.
Mix bananas, butter, sugar, egg, nutmeg & vanilla together. Sprinkle baking soda and salt around on top of the banana mixture.
Then gently stir in flour. Don’t over mix.
In a small dish, mix together the 1/3 cup sugar & 1 tbsp. cinnamon.
Add ½ of the batter to the loaf pan or ½ of the amount of batter to each muffin cup, then sprinkle cinnamon & sugar mixture over the batter. Add the rest of the batter to the pan/muffin cup.
In another small bowl mix together the streusel topping ingredients. Then sprinkle the top of the filled tin/muffin cups with the streusel topping.
If you’re making a loaf put in oven for 60 minutes. If you’re making muffins put in oven for 30 minutes.
